We recently collaborated with Josephine from @ausfitnessblogger. She used some of our vibrant green everyday matcha to come up with this mouth-watering raw matcha, peppermint & chocolate slice. If you're looking for a crowd pleasing, healthy and easy to make dessert slice, this is just the thing for you!
1/2 cup almonds
1/2 cup cashews
1/2 cup medjool dates
1/2 cup coconut (shredded)
1 cup cashews soaked for 1-2 hours in water
1 tbsp of coconut butter
1 tbsp maple syrup or rice malt syrup
1/4 cup coconut oil
1 tsp peppermint essence (be careful not to use too much - very strong!)
Handful of fresh mint finely chopped (don't use too much!)
Place all of your ingredients for the base in the food processor and blend until combined.
Line a baking tin with baking paper, then transfer the mix into the tin and press mixture down firmly to make the base. Place in freezer whilst you create the matcha filling.
Blend all filling ingredients in the food processor (clean it between each step) until smooth and creamy, then spread over the base layer and put back in the freezer.
For the chocolate topping, place all ingredients in a bowl and then melt for about 20 seconds. Use a fork to whisk it together until completely melted. Pour over filling layer evenly and place in freezer.
Once the top is solid, cut it up, serve and enjoy!
