Yum! Banana, Coconut & Raspberry Matcha Muffins Recipe

Matcha muffins

INGREDIENTS

  • 1/2 cup of coconut flour
  • 1/2 cup of almond flour
  • 2 tsp of Mista Matcha Everyday Matcha
  • 1tbsp maple syrup
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 2 bananas
  • 4 eggs
  • 1/3  cup almond milk
  • 2 tsp vanilla extract
  • 1/2 cup shredded coconut
  • 1 generous tbsp melted coconut oil
  • Optional raspberries

METHOD

  • Whisk together all the dry ingredients (flours, salt, baking soda, matcha, shredded coconut and sugar)
  • In a separate bowl, beat (or food process/blend) the wet ingredients (including the bananas) until frothy
  • Combine the dry and wet mixtures together and stir until combined
  • Spoon the mixture into pre-lined muffins tray and bake in the oven for 20 minutes on 180 degrees celsius
