Want to bake something super easy? Give these muffins a go. You won’t be disappointed! I enjoy these for breakfast or mid morning snack. The white choc chips are optional... They do compliment the matcha flavour.
This recipe makes around 6 good sized muffins.
- 1 large avocado, ripe
- 1/2 cup maple syrup
- 1/4 cup whole milk
- 1 Tbsp. lemon juice, fresh
- 1 large egg
- 1 tsp. vanilla extract
- 2 cups All-Purpose flour
- 1 1/2 Tbsp. matcha powder
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup white chocolate chips optional
Preheat the oven to 180 degrees. Spray a cupcake tin with oil or line with liners and set aside.
In a food processor, mix the avocado and maple syrup together for 1-2 minutes. Then add in the milk, lemon juice, egg and vanilla extract. Blend and set aside.
In a separate medium sized bowl, whisk together the flour, matcha, baking powder and salt. Gently fold this dry mixture into the wet ingredients.
Stir in chocolate chips or you can sprinkle some on top (optional step). Scoop batter evenly into prepared muffin tin and bake for 15-20 minutes or until a fork inserted into the center of a muffin comes out clean.
